Components of Afternoon Tea: • Freshly Brewed Tea • Milk, Sugar & Lemon • Sweets & Savories • Three tiered stand for serving OR separate course servings (in order: Savories; Scones; Sweets). Correctly positioned, the foods are as follows: • First Tier (Bottom): Tea sandwiches which are commonly referred to as Savories. Types = egg, chicken salad, cucumber, salmon, etc. • Second Tier (Middle): Scones with clotted or whipped cream and strawberry jam. • Third Tier (Top): Pastries, tarts, chocolates or anything sweet! ALL pieces should be “bite sized.”
