Russian Food Service (A La Russe) • In the Russian style, the servant presents the decorated meats and other dishes in one whole piece on the platter then carves it in front of the guests. An arranged plate is then presented to each guest. This type of service has been replaced by a form of service that uses a small serving table which is equipped with a portable stove where the foods were then carved and served. • Which do you use when you entertain?
